When doing expository or persuasive essays is 3 body paragraphs enough to score well?

Yes, you can get a 10 with 3 body paragraphs of ~250 words length.

Yes definitely. However you need to make sure they meet a specific word limit to make at least 800 - 1000 words, i'd say.

Yes. 3 and 4 are both okay as long as you are close or in the word limit. I like doing 3.
