or does enrolling just indicate which subjects you will have to incur fees for and all that jazz and the timetabling comes out later?

The former. Enrolling just dictates what subjects you do. Timetabling opens on the 2nd of Feb at 10am, where you select the actual times you will attend classes.

Hey bro, where do you get all this information from? (Dates for timetabling, etc.)

Here's a link to timetabling dates and principal dates. Google is your friend; usually searching "class registration unimelb", "principal dates unimelb" or "other query unimelb" will get you somewhere.

I would highly recommend you keying in timetabling dates into your calendar now, especially for semester 2. You guys aren't in high school anymore, in uni sometimes you're just expected to know things without anyone really telling you. Take it for someone who found out about semester 2 timetabling at 3pm via Facebook after all the good classes were gone!  :(
