How many words/pages are we expected to write realistically for the AC and essay for the exam?

I don't have an answer. But I sure do hope it's not much. So far in the SACs I have been able to scrape past 2 pages. I feel like that isn't enough though.

Our teacher has said to just write as much as we need to. But that doesn't compute in my head.

When I did EngLang, I averaged around 600-650 words for practice ACs and 750-800 words for practice essays. For the exam, I'd aim for something around or a bit lower than that.

From memory it's something like 600 words for both the essay and the AC. I wouldn't worry about it too much, though - you want to emphasise quality/deep analysis.
