I think enzymes can be tertiary or quaternary? Most of them are tertiary though...

they can be either

i just googled it
eg:
RuBisCO has a quaternary structure
pyruvate kinase has a quaternary structure
Lactate Dehydrogenase has a quaternary structure
Glutamine Synthetase has a quaternary structure

Sounds like a bit of a misunderstanding really. The primary, secondary etc. are a way of classifying certain levels in the structure of proteins. You don't say an enzyme is either a tertiary or quaternary enzyme; you're just speaking about the tertiary or quaternary structure of a protein, which in this case happens to be an enzyme. An enzyme still has a primary and secondary structure.

yep i think someone on here spoke about it as a level of magnification, which was a good analogy

but im sure there has to be an enzyme with one folded polypeptide chain

maybe these one

Yeast Glyoxalase I

Glucokinase
galactose oxidase
Phospholipase A2
