95 UMAT, expected ATAR of 98+ and possibly 99 (my school won't tell us our predicted scores). Chances?

I'd say you have very high chance of getting an interview with 95umat/99atar. Provided you do decently in your interview, a spot in the new MD course at Monash could very likely be yours!

(interstate: Adelaide uni would look very highly on your 95 umat, UNSW may require a high 99s ATAR)
if you get an interview, what are we actually meant to say??? like do we need to bring awards and stuff ?
Deuce answered this pretty well, but I do suggest having a look around online for some general interview tips.
It's not really about bragging (at the interview stage, they already know you're smart and are a good student), but more about presenting the personal qualities/characteristics that doctors should have, e.g. compassion, curiosity, justified decision marking etc.
To be honest though, there is no yes or no answer to the questions, nothing that you are "meant to say", interviewers take numerous interviews and anecdotally I'm telling you they surely won't want to hear generic answers.

I was wondering, one of my friends got an 58% percentile, another 62% percentile and lastly a 65% percentile. They are all expected to get 95 plus in their ATAR and are hoping to get into Adelaide Uni (Note: they are all South Australian and non-rural). Is there still a chance for any of them to get in, all are willing to bond themselves.
Ita weird because the UMAT only makes up 20% whereas the interview and ATAR are 40% each!
Disclaimer: I am not from SA so please take what i say with a grain of salt
When I attended the interviews (first round, interstate), nearly everyone I met had 90+.... so I'd say the 58 and 62%ile friends would unlikely get a spot in MBBS (bonded or not) at Adelaide Uni. Although UoA does prefer to take SA students, it really is quite competitive and their scores probably will be too low.
While for the 65%ile friend, if his/her ATAR is very high (unfortunately i don't think 95+ will cut it, more like a high 98/99s) and they also perform very well in the interview, they'd have a chance of getting into Adelaide Uni
