Can someone show me how to timetable? How do you know the times available for each lecture and tute?

Official timetabling opens Feb 4th. You can get the times for each subject from the 2013 handbook online. E.g. Physics 1: https://handbook.unimelb.edu.au/view/2013/PHYC10003

click "view timetable"

Is it ok to have 2 lectures/tuts directly after one another? Eg. 1pm-2pm then 2pm-3pm? Do I have to account for travel time between buildings or not?

The uni apparently allows 5-10 minutes between lectures to get to classes, so you should have time if you're proactive about packing up and quick to get to class.

There will be ten minutes for you to go to your next class.  It's usually not a problem unless one of your classes is in like Law and the other is in Redmond Barry.  If you tell us where they* are we can tell you how annoying it's going to be for you :3

Actually not too bad, as John Medley is just north of Grattan St and the Law building is at the south end of University Square.

I know, I'm doing an intensive subject which involves an 11-day trip to New Zealand hence only three subjects :)
